Spinach-Rice Casserole

Ingredients:

  4               cups  brown rice -- cooked
  2             pounds  spinach -- raw, chopped
  1                cup  onion -- chopped
  2             cloves  garlic -- minced
  3        tablespoons  butter
  4                     eggs -- beaten
  1                cup  milk
  1 1/2           cups  cheddar cheese -- grated
     1/4           cup  parsley -- chopped
  2        tablespoons  tamari sauce
     1/2      teaspoon  salt -- or to taste
                        a few dashes each nutmeg -- cayenne
     1/4           cup  sunflower seeds
                        paprika
 

Preparation:

Saute onions and garlic with salt in butter. When onions are soft, add spinach. Cook approximately 2 minutes. Combine with all ingredients except sunflower seeds and paprika. Spread into buttered casserole and sprinkle sunflower seeds and paprika on top. Bake covered 35 minutes at 350 degrees.
