EGG AND RICE BAKE

Ingredients:

   1      package       frozen English peas -- (10 oz.)
   3      cups          cooked regular rice
   2      tablespoons   diced pimiento
   2      tablespoons   chopped fresh parsley
   1      tablespoon    minced onion
     1/3  cup           butter -- melted
     1/4  teaspoon      salt
     1/2  cup           shredded American cheese -- divided (2 oz.)
   6                    eggs
 

Preparation:

Cook peas according to package directions; drain. Combine peas, next 6 ingredients, and 1/4 c. cheese; toss well. Spoon into a greased 10 x 6 x 2 inch baking dish. Make six 2 inch wells in rice mixture using back of a spoon; break an egg into each well. Sprinkle remaining 1/4 c. cheese on top; bake at 350 F for 30 minutes or until the eggs are set.
