Provencal Vinegar

Ingredients:

  1              quart  red wine vinegar
  2             sprigs  thyme
  2             sprigs  rosemary
  2             sprigs  oregano
  1              sprig  basil
  1                     bay leaf -- (1 to 2)
  2             cloves  garlic
  2          teaspoons  assorted peppercorns
  1              strip  orange peel -- (approx. 1" x 4")
 

Preparation:

Bring the wine vinegar to a simmer in a non reactive pan. Place all the other ingredients in a pre washed bottle or jar. Add the vinegar. Let cool. Cap and seal. Store the vinegar for at least one week before using. Give the bottle a gentle shake every day or two.
