Pickled Garlic

Ingredients:

  4              heads  garlic -- cloves separated
                        -- and peeled
  2               cups  red wine vinegar
  2               cups  water
  1                cup  sugar
  10                    whole         cloves
  2        tablespoons  black peppercorns
  2              small  hot peppers -- up to 4
 

Preparation:

Place all the ingredients in a large saucepan and bring to a boil. Cook f or 10 minutes, stirring occasionally. Garlic should be tender, but not mu shy. Remove from heat and cool. Put in a sterilized glass jar and seal ti ghtly. Refrigerate for at least 4-6 weeks before serving, but the flavor improves with age, even years of age.
