Ingredients:

  1              pound  black beans
     1/4         pound  sliced bacon
  1           teaspoon  garlic
  1                cup  onion
     1/4      teaspoon  cayenne
     1/4      teaspoon  salt
  4               cups  brown stock
  2               cups  cooked rice
 

Preparation:

combine beans and water to cover in a saucepot, over a moderate flame bring to a boil, simmer for 3 minutes, remove from heat, cover, and let stand for 60 minutes drain, rinse, and drain well combine beans and 6 cups water, over a moderate flame crumble bacon into the pot add garlic, onions, chile powder, cayenne, and salt add stock, bring to a boil, reduce heat, and simmer for 3-4 hours, until beans begin to fall apart and sauce is well thickened serve hot with hot-cooked rice
