Lime-Ginger Citronette

Ingredients:

  2             ounces  fresh lime juice
  1           teaspoon  crystallized ginger pieces
  1           teaspoon  lime zest -- minced
     1/2      teaspoon  garlic -- minced
  1           teaspoon  honey
  1                cup  olive oil
                        salt and pepper -- to taste
 

Preparation:

Combine the lime juice and ginger in a blender and blend until the ginger is cut into little pieces. Do not strain. Transfer to a bowl and mix in the lime zest, garlic, and honey. Whisk in the oil and season with salt and pepper. Makes 1 1/4 cups.
