Preparation:
Sift flour, salt and baking powder together. Cream margarine and sugar. Mix
egg, honey, and vanilla into creamed mixture. Stir in the dry ingredients
and coconut thoroughly. Shape in a medium-small roll. [cookies will spread a
lot]. Wrap in plastic wrap and chill at least 3 hours or overnight. To bake:
Slice dough into 1/4-inch slices. Place on ungreased cookie sheet and press
each cookie with floured fork tines or bottom of a glass to about 1/4-inch.
Bake at 3751/4 10 - 12 minutes. Makes about 6 dozen. Keep in airtight
container or they will dry out. |
