LIMA BEANS AND HAM

Ingredients:

     1/2            c.  chopped onions
  1                     garlic clove    minced
  2              Tbsp.  butter or margarine
  1              Tbsp.  flour
  3 1/3             c.  large drained   cooked lima beans
     1/2           lb.  boneless ham    cut in 1-inch cubes
     3/4            c.  carrots thinly sliced
  2              Tbsp.  dry white wine
     1/4          tsp.  dry mustard
     1/4          tsp.  dried thyme     crushed
  1               dash  ground allspice
                        salt    to taste
  1                 c.  bread crumbs
  1              Tbsp.  butter
 

Preparation:

Saute onion and garlic in butter until onion is tender; blend in flour. Combine with beans, ham, carrots, 1 c. water, wine, mustard, thyme and allspice, plus salt to taste. Place in greased 5-cup baking dish. Bake at 350 F for 1 hour or until most of the liquid is absorbed. Add Buttered Bread Crumbs during the last 15 minutes. Let stand for 10 to 15 minutes before serving. Buttered Bread Crumbs: Saute bread crumbs in 1 Tbsp. butter until crumbs are crisp and golden brown. Makes about 3/4 c. NOTE: 2 cans cooked alrge lima beans may be substituted for the cooked dry beans.
