Laura's Honey Ham

Ingredients:

  1             medium  smoked pork picnic shoulder (I have done -- (about

                        ham.  No difference except the price
                        really)
                        Water
  2               cups  sugar
  2                cup  honey or brown sugar (I like the honey
                        best but the brown sugar ain't
                        bad either -- -)
  1                can  frozen orange juice -- (6-ounce) thawed
                        (undiluted)
  1                tsp  whole cloves
 

Preparation:

Make diagonal slits, 1/2 inch apart, halfway through the ham to where knife touches bone. Place ham in a deep bowl (I use a huge stock pot) and barely cover with water. Stir in sugar. Soak for at least two days in refrigerator. Drain. Place ham in roasting dish lined with enough foil to wrap completely. Pour honey and orange juice all over ham. Insert cloves all over meat. (Actually, I find it easier to reverse these two last steps but I am typing it the way it reads except for my own comments in parentheses). Wrap tightly in foil. Bake at 200 degrees for 6 to 7 hours or until done, unwrapping and basting occasionally with honey mixture. Unwrap and bake at 450 degrees for 15 minutes for slightly crisp skin.
