Vegetable Couscous

Ingredients:

   1      Tablespoon    olive oil
   1      Medium        onion -- sliced
   2      Cloves        garlic -- finely chopped
   2      Cups          carrots -- sliced
   4      Cups          zucchini -- sliced
   1      Can           garbanzo beans -- undrained
   1      Teaspoon      coriander -- ground
   1      Teaspoon      chicken bouillon -- granules
     1/2  Teaspoon      salt
     1/4  Teaspoon      ground turmeric
     1/8  Teaspoon      ground red pepper
   6      Cups          couscous, cooked
 

Preparation:

Heat oil in 3 quart saucepan over med-high heat. Cook onion and garlic in oil about 3 minutes, stirring occasionally, until onion is tender. Stir in remaining ingredients except couscous. Heat to boiling; reduce heat. Cover and simmer 12 to 15 minutes or until vegetables are crisp tender. Serve with couscous.
