   1      small         eggplant -- sliced
   2      medium        zucchini -- sliced
   3      medium        tomatoes -- sliced
     1/4  cup           wish-bone italian dressing
     1/4  cup           grated parmesan cheese
 

Preparation:

Preheat oven to 350`. In shallow casserole dish, arrange eggplant, zucchini and tomatoes in overlapping rows. Pour Italian dressing over vegetables; sprinkle with Parmesan cheese. Bake uncovered 30 minutes. Serve hot or warm. Sprinkle, if desired, with chopped fresh basil. Makes about 6 servings.
