Ingredients:

  1 1/4         pounds  turkey breast slices
  3        tablespoons  flour
     1/2      teaspoon  salt
     1/4      teaspoon  pepper
  2        tablespoons  butter or margarine
  1         tablespoon  oil
     1/4           cup  chopped shallots or green onions
  4             ounces  mushrooms -- (about 2 cups),
                        -- sliced
  2        tablespoons  brandy
     3/4           cup  champagne or dry white wine
     1/2      teaspoon  tarragon
  1         tablespoon  minced parsley
 

Preparation:

Dust breast slices with flour, salt and pepper. Saute in butter and oil until lightly browned on both sides. Remove slices from pan. Add shallots and thickened. Garnish with minced parsley.
