Spinach And White Beans

Ingredients:

  2        tablespoons  pure or extra virgin
                        olive oil
  2                     garlic cloves -- minced
     1/2         pound  fresh spinach -- stems removed,
                        coarsely chopped
  1                can  white beans -- (15 ounces) rinsed,
                        drained
  1         tablespoon  balsamic vinegar
                        parmesan cheese -- grated or shredded
 

Preparation:

Heat oil in heavy large skillet over medium-high heat. Add garlic and stir 1 minute. Add spinach and stir until just wilted. Add beans and vinegar to skillet and stir until heated through. Season to taste with salt and pepper. Serve sprinkled with Parmesan cheese.
