Spicy Rice With Black-Eyed Peas

Ingredients:

     3/4  cup           instant rice -- uncooked
     1/4  cup           chopped green bell pepper
   1      tablespoon    chopped fresh oregano
     1/4  teaspoon      salt
     1/8  teaspoon      ground red pepper
   1      medium        onion -- chopped
   1      clove         garlic -- finely chopped
   1      can           stewed tomatoes -- undrained
   1      can           black-eyed peas -- rinsed and drained
 

Preparation:

Heat all ingredients to boiling in 10-inch skillet, breaking up tomatoes and stirring frequently; reduce heat. Cover and simmer about 10 minutes or until liquid is almost absorbed.
