Ingredients:

     1/2           cup  honey -- (125 ml)
     1/4           cup  ketchup -- (50 ml)
  1         tablespoon  cider vinegar -- (15 ml)
  1           teaspoon  chili powder -- (5 ml)
  1           teaspoon  salt -- (5 ml)
  32            ounces  canned black beans or kidney beans -- (1 l) rinsed
  12            ounces  canned kernel corn -- (375 ml) drained
  4             ounces  canned chopped green chilis -- (125 ml) drained or
  1              large  jalapeno pepper -- seeded and chopped
     1/2           cup  chopped onion -- (125 ml)
  2        tablespoons  chopped cilantro -- (25 ml)
                        garnish - red bell pepper rings and
                        cilantro sprigs
 

Preparation:

Preheat oven to 350 degrees F (180 degrees C). In a 1-1/2 qt (1.5 L) casserole, combine honey, ketchup, vinegar, chili powder, salt, beans, corn, green chilis, onion, and cilantro. Cover and bake 45 minutes, stirring occasionally. Arrange bell pepper rings over top, re- cover and continue baking 15 minutes. Garnish with cilantro sprigs. Makes 6 servings Chris in Phoenix.
