Ingredients:

   2      tablespoons   butter or margarine
   1      medium        onion -- chopped
   1      medium        green bell pepper -- chopped
   1      cup           long-grain rice -- uncooked
   2      cups          water
   1 1/2  teaspoons     salt
   1      can           red kidney beans -- rinsed and drained
     1/4  cup           bacon bits
 

Preparation:

Melt margarine in 3-quart saucepan over low heat. Cook onion and bell pepper in margarine, stirring occasionally, until onion is tender. Stir in remaining ingredients. Heat to boiling, stirring once or twice; reduce heat. Cover and simmer 14 minutes. Remove from heat; stir in bacon flavor bits. Fluff lightly with fork. Cover and let steam 5 to 10 minutes.
