Moroccan Garbanzo Beans With Raisins

Ingredients:

   1      tablespoon    peanut oil
   1      large         onion -- sliced
   1      clove         garlic -- finely chopped
   1      cup           butternut squash -- diced
     1/4  cup           raisins
   1      cup           chicken broth
   1      teaspoon      ground turmeric
   1      teaspoon      ground cinnamon
     1/2  teaspoon      ground ginger
   1      can           garbanzo beans -- rinsed and drained
   2      cups          hot cooked rice
 

Preparation:

Heat oil in 3-quart saucepan over medium heat. Cook onion and garlic in oil stirring frequently until tender. Stir in remaining ingredients except beans and rice. Heat to boiling; reduce heat. Cover and simmer about 8 minutes, stirring occasionally, until squash is tender. Stir in beans; heat through. Serve over rice.
