Ingredients:

   4      ounces        uncooked bow tie pasta
     1/4  cup           butter or margarine
   1      teaspoon      garlic
   1      medium        zucchini -- cut into 1/2"
                        -- pieces
   1      small         eggplant -- cut into 1/2"
                        -- pieces
   1      medium        onion -- cut into eighths
   1      teaspoon      basil leaves
     1/2  teaspoon      salt
     1/2  teaspoon      pepper
   1 1/2  cups          shredded mozzarella cheese
 

Preparation:

Cook pasta according to package directions, drain. In skillet, melt butter until sizzling. Stir in garlic. Stir in remaining ingredients except past and cheese. Cook over medium heat, until vegetables are crisply tender. Stir in pasta. Continue cooking, stirring occasionally, until heated through. Stir in cheese. Serve immediately.
