Mom's Baked Beans

Ingredients:

   1      pound         dried navy beans
   1      quart         cold water
   1                    onions -- sliced (1 to 2)
     1/2  tablespoon    salt
   2      tablespoons   vinegar
   3 1/2  tablespoons   mustard
     1/2  cup           brown sugar
     1/2  cup           molasses -- to 3/4 cup
     1/2  cup           ketchup
   1      pinch         pepper
     1/4  pound         bacon or ham
 

Preparation:

Bring beans to a boil, then soak overnight. Next morning, bring to a boil and boil for 10 - 15 minutes. Set aside. Drain liquid into the baking pan. Add all other ingredients and stir. Then add beans. If necessary, add more water, 2" more than beans. Bake at 250ΓΈ for about 4 - 5 hours. Process 1 cup beans and then re-add to thicken. Freezes excellent.
