Scottish Eggs

Ingredients:

3                       hard boiled eggs 
1/2       lb            breakfast style or spicy loose sausage (raw) 
                        Soy protein isolate (non flavored or vanilla) 
1         teaspoon      parsley flakes
 

Preparation:

Preheat oven to 350 degrees. Wrap sausage around each egg so that it is coated completely. Pending on the size of your eggs, you may use more or less than the 1/2 lb. for the total recipe. Roll in soy protein isolate lightly. Sprinkle with parsley and bake for about 20 to 25 minutes until sausage is cooked. Great hot or cold.
