Greek Chick-Pea Pitas

Ingredients:

   8      ounces        chickpeas -- rinsed and drained
   1      cup           cherry tomatoes -- halved
   1      small         red onion -- sliced
   1      tablespoon    olive oil
   2      tablespoons   fresh lemon juice
     1/2  cup           chopped flat-leaf parsley
     1/4  teaspoon      salt
     1/4  teaspoon      freshly ground black pepper
   3      ounces        feta cheese -- crumbled
   4                    pita bread
 

Preparation:

In medium bowl, combine all ingredients, except for pitas. Divide equally and stuff into the four pitas. Serving (3/4 cup salad and 1 pita) provides: 1/4 vegetables, 2 pro, 1 bread.
