Beer Baked Beans

Ingredients:

   1      pound         dry navy beans
     1/2  pound         lean chorizo sausage
   1 1/2  teaspoons     salt -- , or to taste
   3      tablespoons   brown sugar
     1/2  teaspoon      dry mustard
   4      tablespoons   molasses
   2      tablespoons   ketchup
   1      large         onion -- , sliced
   1      12 oz can     beer -- of your choice
 

Preparation:

Sort, wash and drain beans, then cover with water and soak overnight. Drain beans and put in crockpot. Remove and discard outer casing from chorizo; chop chorizo. Add to crockpot along with the remaining ingredients. Mix well. If needed, add more beer to cover beans. Cover and cook on low for 6-8 hours. Check occasionally to make sure liquid is adequate and add more if necessary. You can use water, but the flavor will be changed slightly.
