Baked Yellow Eye Beans Maine Style

Ingredients:

  1              pound  yellow eye beans -- (3 cups)
     1/4         pound  salt pork
     1/4           cup  sugar
     1/2           cup  molasses
  1           teaspoon  dry mustard
                        salt and pepper to taste
  1             medium  onion -- peeled
 

Preparation:

Pick beans over , rinse and soak overnight in cold water. Place onion in botton of 4 quart bean pot, add drained beans. Cut through pork rind and place on top of beans. Mix remaining ingredients with 1 pint boiling water and pour over beans. Add additional hot water to cover beans. Cover and bake at 300 for 6 hours, adding boiling water as necessary. Uncover the last half hour. Serve with steamed brown bread, johnny cake or biscuits and cole slaw.
