Savoury Lentil Roast

Ingredients:

  8                 Oz  lentils
  1             Medium  onion -- chopped
  1                     bay leaf
  2                Tsp  vegemite
  3                     eggs -- beaten
  1              Clove  garlic -- crushed
  3                 Oz  reduced-fat cheese -- grated
  7                 Oz  brown rice -- cooked
                        salt and pepper
 

Preparation:

Wash lentils, soak for 45 mins in boiling water and drain. Dry-fry onion until soft. Place lentils in a pan with bay leaf and 1/2 pt water and simmer for 30-45 mins. Remove the bay leaf and stir in the vegemite, beaten eggs, garlic, cheese, onion and rice. Pack into a greased loaf tin and bake at 150°C (300°F), for about 1 hour, or until cooked.
