LENTIL PILAF

Ingredients:

   3      cups          Water
   1      cup           Dried lentils
   2      tablespoons   Olive or vegetable oil
   3                    Ounces fully cooked smoked -- ham Cut into thin st
     1/4  teaspoon      Salt
     1/8  teaspoon      Pepper
   1      Clove         Garlic --  finely chopped
   2      tablespoons   Chopped Fresh parsley
   2      tablespoons   Lemon juice
   1      small         Tomato -- seeded and chopped
 

Preparation:

Heat water and lentils to boiling; reduce heat. Cover and simmer 25 to 30 minutes or until lentils are tender but not mushy; drain.Heat oil in 10-inch skillet until hot. Add lentils, ham, salt, pepper and garlic. Cook 5 minutes, stirring frequently. Stir in remaining ingredients. Cook and stir 2 minutes or until mixture is hot.
