Sicilian Style Fennel Sausage

Ingredients:

  3             pounds  lean ground pork
  1              pound  ground round
  1              pound  italian flat-leaf parsley
     3/4           cup  romano cheese
     1/4           cup  parmesan cheese
  3          teaspoons  fennel seed
  5          teaspoons  kosher salt
  2          teaspoons  freshly ground black pepper
     1/8      teaspoon  cayenne
 

Preparation:

combine ingredients-mix well cover and chill for up to 5 days mix in a little water, just until manageable stuff into prepared casings or shape into patties or meatballs fry in a dry skillet, over a medium-low flame, for 15-20 minutes, until well browned on all sides and cooked through serve hot
