Pork Lo Mein

Ingredients:

   5      ounces        lo mein noodles -- uncooked, halved
                        or thin spaghetti
   6      ounces        pork loin -- thinly sliced
   1      large         onion -- chopped
   2      large         clove garlic -- minced
   2      teaspoons     sesame oil
     2/3  cup           chicken broth -- divided
   3      tablespoons   soy sauce -- divided
   1 1/2  teaspoons     ground ginger
   3      drops         hot-chili oil -- optional
     1/4  cup           sherry -- divided
   1 1/2  cups          snow peas
   1                    red bell pepper -- diced
     1/3  cup           scallion -- sliced
   2      teaspoons     rice vinegar
 

Preparation:

Cook noodles in a large pot of boiling water until just tender. Drain and set aside. Coat a large no-stick frying pan with no-stick spray. Place over medium heat. Add pork and cook, stirring, for 6 to 7 minutes, or until pork is lightly browned. Transfer to a bowl. Add onions, garlic, sesame oil, 3 tablespoons broth and 2 tablespoons soy sauce to pan. Cook over medium heat, stirring frequently, for 7 to 8 minutes. Add ginger, hot-chili oil, 3 tablespoons of sherry and remaining broth to pan. Stir in pork. Cover and simmer for 4 to 5 minutes, or until pork is cooked. Add snow peas, red peppers and scallions. Cook, stirring frequently, for 5 minutes, or until vegetables soften. Add vinegar, remaining soy sauce and remaining sherry. Stir to mix well. Stir in noodles. Mix well and heat through.
