Mediterranean Stew

Ingredients:

   1                    eggplant -- peeled & chopped
   2                    zucchini -- chopped
   1                    red or green bell pepper -- seeded & chopped
   1                    onion -- chopped
   3      large         tomatoes -- chopped
   2                    14-oz cans garbanzo beans -- rinsed & drained
   1                    14-oz can artichoke hearts in water -- drained & quartered
   1      tablespoon    oregano
                        fresh ground black pepper
                        salt -- to taste
                        crushed red pepper flakes -- (to taste)
   1      package       egg noodles -- cooked
 

Preparation:

Add all ingredients to crock pot except for noodles. Stir well. (Sometimes I also add a Tbsp. tomato paste for a thicker stew.) Cook on low for 8 hours. Serve over cooked noodles with a crusty bread and salad.
