Ingredients:

   1      tablespoon    olive oil
   1 1/4  cups          onion -- diced
   1      tablespoon    garlic -- chopped
   1      cup           zucchini -- sliced
   1      cup           yellow squash -- sliced
   1      cup           bell pepper -- cut into strips
   1 3/4  cups          canned tomatoes -- chopped and drained -- reserve juice
     2/3  cup           tomato paste
     3/4  cup           warm water
     1/2  teaspoon      sea salt
     1/4  teaspoon      black pepper
   2      tablespoons   fresh basil -- chopped
   9      ounces        linguini
     1/4  cup           parmesan cheese -- grated
 

Preparation:

Heat the oil in a skillet and saute the onion and garlic for 1 minute. Add the squashes and bell pepper. Saute 3 to 4 more minutes. Stir in the reserved tomato juice, tomato paste, water, salt and pepper. Simmer until the vegetables are tender. Stir in the tomatoes and basil and simmer 20 more minutes. Prepare the pasta and serve the sauce over it.
