Curried Chicken Salad With Grapes

Ingredients:

   3      cups          cooked chicken breasts -- cubed
   1 1/2  cups          grapes -- halved green or red
     1/2  cup           sliced celery
   2      tablespoons   sliced scallions
     1/2  cup           diced red pepper
                        ***DRESSING***
     3/4  cup           low-fat mayonnaise
   2      tablespoons   orange juice
   1      teaspoon      curry powder
                        fresh ground pepper -- to taste
 

Preparation:

Combine all salad ingredients. Combine all dressing ingredients in a small bowl and whisk together until smooth. Toss the dressing with the salad and serve.
