Oatmeal-Raisin Cookies With Coconut

Ingredients:

  5        tablespoons  water
  2               cups  light brown sugar
     2/3           cup  unsalted butter
  2                     egg
  4               cups  rolled oats
  2               cups  flour
  1                cup  raisins
  1                cup  shredded coconut
  1           teaspoon  baking soda
  2          teaspoons  baking powder
 

Preparation:

Combine hot water and brown sugar in a mixing bowl stir to dissolve add butter-mix well add eggs-mix well combine remaining ingredients-mix well add to bowl-mix well drop by teaspoonsful onto a parchment-lined baking sheet press or spread to flatten slightly bake at 350 degrees for 10-12 minutes, until golden remove to a cooling rack serve at room temperature
