Ingredients:

   2      cups          whole wheat flour -- (or whole wheat
                        -- graham)
   1      cup           butter -- softened
   1      teaspoon      baking soda
   1      teaspoon      cream of tartar
   1                    egg -- beaten slightly
     1/4  cup           apple juice concentrate -- (sugar free) thawed
     1/4  cup           hot water
 

Preparation:

Preheat oven to 350ΓΈ. Place whole wheat flour in large bowl. Cut in the softened butter until the consistency of meal is achieved. Add the baking soda, cream of tartar, juice concentrate, egg and enough water to make a dough that can be rolled thin. The thinner the cookie, the crisper it will be. Roll out dough to 1/8 inch thickness on floured surface. Cut into 4 inch squares. Bake on a non-stick baking sheet (or use parchment paper) for 15 minutes, until beginning to brown on the edges. Cool completely before serving.
