Ingredients:

  6             pounds  bay shrimp
  1                cup  light rum
     1/3           cup  white wine
  1                cup  unsalted butter
  2        tablespoons  shallot
  1           teaspoon  fresh horseradish
  1           teaspoon  dry mustard
  3        tablespoons  fresh lemon juice
     1/2      teaspoon  salt
     1/2      teaspoon  fresh ground white pepper
     1/2      teaspoon  tabasco sauce
  50            slices  white bread
  2        tablespoons  scallions
 

Preparation:

Combine shrimp, rum, and wine-mix well cover and chill for 4-48 hours combine butter, shallots, horseradish, mustard, and lemon juice-mix well add to shrimp mixture-mix well season to taste with salt, white pepper, and tabasco sauce cut bread slices into circles, squares, triangles, or strips bake or broil to toast lightly on both sides spread with shrimp mixture garnish with minced scallions cover and chill for 1-96 hours serve slightly chilled or at room temperature
