Shrimp Tarragon With Pimiento Rice

Ingredients:

   2      teaspoons     butter or margarine -- melted
   1      tablespoon    flour
     1/2  cup           condensed cream of shrimp soup
   2 1/2  tablespoons   chicken broth
   4      teaspoons     sauterne wine
   1 1/4  teaspoons     lemon juice
     1/8  teaspoon      seasoned pepper
     1/8  teaspoon      salt
     1/8  teaspoon      onion powder
   1      pinch         tarragon
   5      ounces        raw shrimp -- peeled, deveined or
   5      ounces        crab meat
                        *pimiento rice*
     1/3  cup           onions -- chopped
   2      teaspoons     butter or margarine
   1      cup           cooked rice
   1      tablespoon    pimientos -- diced
 

Preparation:

Blend butter and flour until smooth. Slowly add soup, broth, Sauterne, lemon juice, and seasonings. Cook, stirring constantly until thickened. Add shrimp and cook 5 to 10 minutes longer. Serve over Pimiento Rice. Sprinkle with fresh parsley. PIMIENTO RICE: Saute onions in butter until tender. Add rice and pimientos, and cook until thoroughly heated.
