Spicy Shrimp Soup Or Tom Yum Goong

Ingredients:

     1/2         pound  shrimp -- shelled and cleaned
  4               cups  water
     1/2           cup  straw mushrooms -- canned
  5                     kaffir lime leaves
  6        tablespoons  lime juice
  6        tablespoons  fish sauce -- squid brand
  1              stalk  lemon grass -- cut in 1"lengths
                        -- lower 1/3 portion
  1                     golonga root -- sliced
  4             stalks  green onions -- chopped
     1/4           cup  fresh cilantro -- chopped
                        thai chili peppers -- optional
     1/4      teaspoon  chili in oil
 

Preparation:

Shell shrimp or prawns(preferred) and reserve shells. Rinse prawns and shells. Place shells in a pot with the 4 cups water. Bring to a boil. Strain stock and discard shells. Add lime leaves, golonga, and lemon grass to stock and simmer for awhile. Add fish sauce, cook a few minutes more. Add shrimp and do not stir. Add chili oil, Add mushrooms. Put lime juice in bowl add soup and garnish with cilantro, chili peppers, and onions.
