Thai Basil Dipping Sauce

Ingredients:

     2/3           cup  rice vinegar
     1/2           cup  dark corn syrup
     1/4           cup  nam pla
     1/3           cup  garlic puree
  3          teaspoons  thai chile
  2          teaspoons  sugar
     3/4           cup  fresh basil leaves
 

Preparation:

combine vinegar, syrup, nuoc mam, and 3 tablespoons water in a saucepan, over a medium flame heat and stir to dissolve sugar and blend well remove from heat and cool combine chiles, sugar, and garlic in a food processor process to a fine puree add syrup mixture and process until well blended add basil and process until well blended cover and let stand at room temperature for 2-4 hours before serving
