Sundial Bean Dip

Ingredients:

  1                can  refried beans -- (16 ounce)
     1/2           cup  salsa
  1                bag  corn chips
     3/4           cup  or 1 medium size tomato -- diced
  1 1/2           cups  shredded cheddar cheese
  1                can  diced green chiles -- (4 ounce)
  1 1/2           cups  sour cream
  1                can  sliced olives -- (2 1/4 ounce)
                        drained
                        Six 8-inch salad plates
 

Preparation:

In medium bowl, combine refried beans and salsa; blend well and set aside. Using six 8-inch plates, arrange chips on the outside rim. Place about 1/3 cup bean mixture in the center of plate. Sprinkle 3 tablespoons cheese and 2 tablespoons diced tomatoes over chips and beans followed by 1 tablespoon diced green chiles. Spoon a large dollop of sour cream on top of beans. Sprinkle 1 tablespoon olives over entire dish.
