Lu's 7 Layer Mexican Dip

Ingredients:

  2        large   can  refried beans
  2               cans  jalapenos -- chopped
  2                     tomatoes -- seeded and chopped
  16            ounces  sour cream
  2                     avocado -- (2 to 4)
  1              clove  garlic
                        salt and pepper -- to taste
  2           packages  taco seasoning
     3/4           cup  cheddar cheese -- shredded
     3/4           cup  mozzarella cheese -- shredded
  1                can  pitted black olives -- chopped
 

Preparation:

1. Mix the refried beans and taco seasoning together, spread in the bottom of a serving dish 2. Mash avocado with garlic, salt and pepper, spread over refried beans. 3. Chop jalapenos into small pieces and sprinkle over avocado 4. Mix together the sour cream and 1 pkg taco seasoning mix, spread over jalapeno layer. 5. Chop and seed tomatoes and sprinkle over sour cream layer. 6. Sprinkle chopped olives on top of tomatoes 7. Sprinkle cheese over top of the whole thing as the last layer. 8. Can be served as is or heat slightly in an oven just until cheese melts.
