Tamale Pie Casserole

Ingredients:

1 1/2     cups          granburger
1 1/4     cups          hot water
                        corn oil
1/2       cup           green pepper
1/2       cup           onion
1         clove         garlic -- pressed
12        oz can        whole kernel corn
6         oz can        tomato paste
1 1/2     cups          water
1         teaspoon      salt
1         teaspoon      chili powder -- optional
2         teaspoons     sugar
4         ounces        grated american cheese
3/4       cup           cornmeal
1/2       teaspoon      salt
2         cups          cold water
 

Preparation:

Rehydrate granburger in 1 1/4 cups hot water for 10 minutes. Pour a little corn oil into a large skillet. Saute green pepper, onion, garlic and rehydrated granburger in the oil till vegetables are tender. Add corn, tomato paste, 1 1/2 cups water, salt, chili powder, and sugar. Simmer for 10 minutes. Add cheese. Stir till cheese is melted. Pour granburger mixture into a 2 quart casserole. In a sauce pan, stir together cornmeal, salt, and water. Cook over medium heat, stirring till mixture is thickened - about 10 minutes. Spoon cornmeal mixture over granburger mixture in the casserole. Bake uncovered at 350 degrees F. for 30 minutes.

As a variation, substitute 2 cups crushed corn chips for the cornmeal mixture. Bake at 375 degrees F. for 15 minutes.
