Gazpacho Dip

Ingredients:

  3              large  tomatoes -- chopped
  3                     firm ripe avocados -- chopped
  4                     green onions -- thinly sliced
  1                can  (4.5-oz) chopped green chiles -- undrained
  3        tablespoons  vegetable oil
  1 1/2    tablespoons  apple cider vinegar
  1           teaspoon  salt
  1           teaspoon  garlic salt
     1/4      teaspoon  pepper
 

Preparation:

Combine first 5 ingredients in a large bowl. Set aside. Combine oil and remaining 4 ingredients; drizzle over tomato mixture, and toss gently. Cover and chill up to 4 hours before serving. Serve dip with tortilla or corn chips. Makes 5 cups.
