Homemade Pear Spread

Ingredients:

1 1/2 cups peeled fresh pear -- about 2-medium
2 teaspoons sugar
1/4 teaspoon ginger -- scant
1/2 teaspoon vanilla extract
 

Preparation:

In a 2-cup measure or similar small microwave-safe bowl, combine the pear, sugar, and ginger. Stir to mix well. Cover with wax paper and microwave on high power for 2 minutes. Stir. Uncover and microwave an additional 1 to 2 minutes on high power or until the pears are just soft. Stir in vanilla. Serve warm or cover and refrigerate.
