PAPAYA and VEGETABLE SALSA

Ingredients:

1 large Papaya -- peeled, seeded, finely chopped
1 Cup Seeded tomatoes -- (finely chopped)
1/2 Cup Peeled seeded cucumber -- (finely chopped)
1/4 Cup Finely chopped green onion
3 tablespoons Fresh lime juice
1 tablespoons Chopped fresh cilantro
1 tablespoons Seeded jalapeno chili -- (finely chopped)
1 package Low-fat tortilla chips
 

Preparation:

Here's a pretty and fresh-tasting salsa that is great with low-fat tortilla chips. Celery sticks and bell pepper strips also make good, healthful "scoops". Combine first 7 ingredients in medium bowl. Season to taste with salt and pepper. (Can be prepared 4 hours ahead. Cover and refrigerate.) Let stand at room temperature 30 minutes before serving. Serve with tortilla chip
