New Potatoes Grilled In Foil

Ingredients:

1 pound new potatoes -- scrubbed, quartered
1 medium onion -- thinly sliced
2 tablespoons olive oil
1 tablespoon chopped fresh rosemary
 

Preparation:

Prepare barbecue (medium-high heat). Combine potatoes and onions in large baking dish. Add oil and rosemary and toss to coat. Season generously with salt and pepper. Cut 4 large squares of foil. Divide potato mixture among foil squares. Gather foil loosely around potatoes, enclosing completely, but keeping in single layer. Pinch edges of foil to seal. Grill potatoes in foil until tender, about 35-45 minutes. Place foil packages on plates, and open carefully to allow steam to escape. Prep Time: 10 minutes Cook Time: 35 minutes Makes: 4 servings Grilling vegetables in foil is great to do for vegetables that take a long time to cook, and also to do while you're grilling meat for the main course.
