Turkey Watercress Club Sandwiches

Ingredients:

1/3 cup regular -- light or non-fat mayonnaise
2 tablespoons dijon mustard
2 tablespoons chopped fresh herbs -- (such as basil, thyme and rosemary)
12 slices regular or turkey bacon
12 slices whole wheat or sourdough bread -- toasted
1 pound thinly sliced turkey breast
1 bunch watercress -- tough ends trimmed
2 medium tomatoes -- thinly sliced
 

Preparation:

Mix mayonnaise, mustard and herbs in small bowl to blend. Season with ground black pepper. Cook bacon in large skillet or microwave until crisp and brown. Drain on paper towels. Spread one side of each slice of bread with mayonnaise mixture. Divide turkey among 4 bread slices. Top with another bread slice. Divide bacon, watercress and tomatoes among sandwiches. Top with remaining bread slices. Cut in half and serve. Prep Time: 15 minutes Makes: 4 sandwiches It's fun to be innovative with club sandwiches. Here I add fresh herbs to the mayonnaise and substitute watercress for lettuce. I like to serve this with potato or macaroni salad for a great lunc
