Preparation:
1. heat oil in pot. 2. add mussaman curry base. saute for one minute. 3. add stew meat and brown on all sides. 4. add onions and saute until soft. 5. add potatoes, coconut milk, seasoning sauce and brown sugar. 6. cover and simmer for approximately 1 to 2 hours or until meat is tender. 7. garnish with peanuts.
note: although mussaman curry is listed, thai red or panang curry can be used. |
