Toasted Breakfast Pudding With Raisins

Ingredients:

1/2 cup cream of rice
1 3/4 cups milk
1/4 teaspoon salt
1/4 cup honey
1/8 teaspoon cinnamon
1/8 teaspoon nutmeg
 

Preparation:

In a heavy pan, lightly brown cream of rice over medium heat; stir frequently. Combine milk and salt; scald. Slowly add browned cream of rice and cook, stirring constantly, for 1 minute. Stir in honey, cinnamon and raisins. Remove from heat, cover and let stand 4 minutes. Spoon into serving dishes and sprinkle with nutmeg. Serve with milk. Makes 4 to 5 servings.
