Preparation:
1. Heat oil in a large nonstick skillet over medium heat untilhot. Add onion, jalapeno pepper, and garlic; saute until tender. Add chicken, and cook until browned, stirring to crumble. Drain; add cumin and next 3 ingredients, and stir well.
2. Position knife blade in food processor bowl; add chicken mixture, cilantro, and remaining ingredients. Process until smooth, scraping sides of processor bowl once. Serve chilled or at room temperature with crackers.
