Best vegetable fried rice

Serves: 6


2 tablespoons butter
1/2 cup finely chopped carrot
1/2 cup finely diced onion
1 medium Jalepeno finely diced
1 teaspoon white sugar
3 large eggs
2 tablespoons soy sauce (you can add more or less to taste)
2 tablespoons olive oil
1/2 teaspoon salt
1/2 teaspoon pepper
1 1/2 cups cold cooked rice
1/2 teaspoon salt and pepper to taste


Saute carrot, onion, jalepeno in 1 Tbls. butter in a wok or non stick skillet, sprinkle with sugar. Stir and cook 3 to 4 minutes on high. When soft, remove from pan. Add 1 Tbls. butter to wok and scramble 3 eggs. Remove from pan and add to the onion mixture. Wipe pan out and add olive oil and heat to smoking. Add rice and stir until coated with oil. Add soy sauce, salt and pepper. Add egg and onion mixture and heat through. Serve hot.
