Preparation:
Heat cream over moderate heat and add sugar. Stir constantly until sugar is dissolved and add vanilla.
In a separate bowl whip the egg yolks. Add the cream/sugar mixture to the yolks and pour into individual ramekins.
Place the ramekins in a hot water bath in a large baking dish. Bake in a 300 oven for 30 minutes. Cool for 2 hours and top with brown sugar.
When ready to serve, place the ramekins under the broiler for two minutes to caramelize the sugar. |
