Preparation:
In medium bowl, combine eggs, celery, green pepper, olives, salt, pepper, and chunky blue cheese dressing; chill. Cut tomatoes crosswise in 3 slices; sprinkle with salt. On lettuce, reassemble each tomato, stem side down: using 1/3 cup egg filling for each tomato, spread evenly between slices. Garnish, if desired, with halved green olives. Makes 6 servings. |
